Childhood Memories

"What one loves in childhood stays in their heart forever."

Picking Peas and Beans the past few days has brought back some wonderful memories. Hot summer days, simple dinners — all from the garden — (the beginnings of my love for tending and growing a garden)

Simple Dinners: One of my favorites… I can honestly taste it right now, and will be tasting it for dinner tonight… one of the simplist yet most delicious means there ever could be in the summer… You can make it one of two ways… curious?

Pea and Potato Soup or Bean and Potato Soup

Honestly, really, there is nothing better; it’s quick, beyond delicious and a MUST for this season when there are brand new potatoes, peas and beans.

I don’t have exact measures for you, because, well, there are ’t any… It really doesn’t matter…

Ingredients:

Fresh Shelled Peas or Snapped Beans

Brand new spuds… fresh out of the dirt — washed— with skins on (they are so tender)

milk (Whole) — you could use alternative milk, but I don’t know how it would taste

Butter - Yes, lots of butter

salt and pepper

Directions:

Cook your potatoes, bite-sized

Cook your peas or Beans (Peas don’t require much cooking fresh out of the shell)

When tender — drain and combine

Add enough milk to make a soup consistency… (really add what you want)

plenty of salt and pepper and a good chunk of butter

Heat through: and EAT!!!

Now when I was a kid, and I guess because my mom wanted us filled up for the rest of the evening… and before I had to become gluten free… my favorite loved way to eat this soup…

YIKES! I can’t believe I am even saying this…. if you are blessed enough to have some homemade bread (always best) break up a slice or two and drop into your soup as it sops up the milk/butter mixture and well

I know that not all childhood memories are wonderful…. but this one… well, it is for me… I so miss my mom and how excited she was every time pea/bean and new potato season would roll around…
