Kathy’s Favorite Cool Weather Fall Soups

As promised: Cool Weather Soup Recipes: I know it is not officially “Cold Weather” yet, but it is so fun to enjoy soups for fresh ingredients!

We are in the height of corn, broccoli, and onion season… These fresh ingredients really ramp up the flavor profile of each of these soups!

BROCCOLI CHEDDAR SOUP:

1 Tbsp. Butter

1 medium to large Onion

1/3 Cup Butter Melted

1/4 Cup Flour

2 Cups Milk

2 Cups Chicken Stock

1 Cut Carrots (Cut up to matchtick size)

1 3/4 Cup Broccoli (Chopped)

1 stalk Celery (Very fine)

2 3/4 C Sharp Cheddar Cheese (Shredded)

Salt/Pepper to taste

  • Sauté onion and butter until translucent and soft (set aside)

  • Melt butter and flour in a saucepan and stir (you can add a few T of milk if necessary)

  • Add the rest of the milk gradually

  • Add Chicken stock

  • Cook until this mixture is thick

  • Add veggies: (Broccoli, Carrots, Celery, and Sauteed onion). Simmer this for approximately 10-15 min. until all is tender

  • Stir in cheese and season with salt/pepper and a bit of hot pepper flakes

  • ENJOY!

CORN CHOWDER:

4 ears of fresh Corn on the cob (cut corn off the cob)

1/2 lb of Bacon chopped and cooked (set aside)

1 clove garlic

1 medium onion

up to 5 Tblsp of flour for thickener

2 Cups Chicken Broth

3 Cups Milk

1 1/2 lbs of potatoes, cut into small bite-sized cubes

3/4 cup cream of half and half, or you can just use milk

Salt and Pepper to taste

  • Cut Corn off the Cob

  • Cook Bacon (Set aside) Leave fat

  • Add 2 T butter and chopped onion and garlic… cook till tender

  • Add flour/ mix in (approx 1 min)

  • Add all your spices along with the milk and broth, and potatoes until tender

  • Add corn and cook for an additional 5 min.

  • Add in Cream/ half and half/ or milk and reserved bacon

  • Enjoy!

Potato Kale Sausage Soup

1 lb Italian Sausage

4 Cups 1/2 and 1/2

3 1/2 cups bite-sized cubed potatoes

2 Cups Chicken Broth

2 Cups milk

1 medium onion

1/2 tsp each of oregano, red pepper flakes, black pepper

2 cups of Kale (Bite sized pieces)

  • Cook sausage crumbles - drain fat

  • Stir in rest of the ingreedients and bring to a simmer (30 min) until all veggies are tender

  • Season with additional salt/ pepper, etc: to taste

  • YUM!
