Kathy’s Roasted Radishes!

Radishes grow just about anywhere. People think, ‘Oh it’s just a radish,’, But radishes are delicious, and people just don’t think of cooking them - - Emeril Lagasse

We love radishes here at Somers Family Farm! So crisp, tangy and yet sweet. Traditionally used in salads, where they shine, but I have always wanted to try raosting them. I had a London Broil cooking for dinner, so thought this would make such a great addition.

Have you ever had roasted radishes? I was a bit fearful that Brian would not be too excited about eating them, so came up with the idea of combining them with Sweet Potato chunks… because after all who doesn’t like Sweet Potatoes!

Here is my version of Roasted Radishes and Sweet Potatoes below: I hope you try them!

Somers Family Farm Radishes!

Freshly harvested and washed Somers Family Farm Radishes!

Roasted Radishes with Sweet Potatoes!

INGREEDIENTS:

As many radishes as you would like, washed and sliced in half

Sweet Potatoes cut into small chunks of equal size (approximately) to radishes

Avacado or olive oil for coating

salt, pepper, parsley and any other spices you may want to try

(I love to keep it very simple)

Radishes and Sweet Potatoes Ready for the Oven


Directions:

  1. Line baking sheet with parchment paper

  2. Place halved radishes and sweet potato chunks on baking sheet and drizzle and coat with your choice of oil (I use Avacado or Olive)

  3. Season with salt, pepper, parsley and any other spices you may like to try. (Thyme or Rosemary would be fantastic choices)

Roast at 400 degrees for approximately 40 min or until tender (check after 30 min. )
