Grass-Fed Beef (Part 1)
Yesterday, two baby calves showed up… Well, not really showed up that way… they were born in the cool of the early morning, out in the pasture—alongside all their other new herdmates… a mix of steers, heifers, and older calves. It was amazing to go out for a visit in the afternoon to see them both nursing and running around like they own the place! They are so cute…
The reality is, on a farm, raising a small herd of animals for food, their life is destined for someone’s dinner plate… and though that may sound horrible to you, it actually is all how its intended to be. In the meantime, their care will be in the hands of their mothers first, and their farmers second… It is a big undertaking to raise animals, whether it is for milk or food… It just doesn’t happen without a lot of farmer effort, especially when you are raising them on a small scale, the time and effort to do so is quite staggering. We, your farmers, will spend nearly 2 years with them.
Curious about why “Grass-Fed Jersey Beef?”
A Few Grass-Fed Jersey Beef Facts
When most people think of Jersey cattle, they picture beautiful, doe-eyed dairy cows grazing peacefully on a hillside. It’s true—Jerseys are famous worldwide for their ultra-rich, high-butterfat milk. But there is a well-kept secret in the sustainable farming world that is finally getting the spotlight: grass-fed Jersey beef is some of the finest, most flavorful meat you will ever taste.
1. The Butterfat Genetic Advantage
The very same genetics that allow Jersey cows to produce rich, creamy milk also apply to their meat. Jersey beef is celebrated for its incredibly fine-grained texture and exceptional intramuscular marbling.
2. Don't Fear the Golden Fat
The first thing you might notice when looking at a raw grass-fed Jersey ribeye is the color of the fat. Unlike the stark, chalky white fat found on grain-fed, factory-farmed beef, Jersey beef features a rich, distinctively yellow-tinted fat.
This golden color is a badge of honor. It proves that the animal lived a healthy life eating a 100% forage diet. That yellow hue comes directly from high concentrations of beta-carotene (Vitamin A), antioxidants, and fat-soluble vitamins absorbed from fresh grasses and clovers. Far from a defect, it’s where the incredible flavor and nutrition live.
3. A Nutrient-Dense Superfood
Choosing 100% grass-fed Jersey beef isn't just a win for your taste buds; it's a massive upgrade for your health. Because these animals never step foot in a feedlot and never eat grain, their nutritional profile is vastly superior to conventional beef:
Omega-3 Fatty Acids: Contains up to five times more heart-healthy Omega-3s than grain-fed alternatives.
CLA (Conjugated Linoleic Acid): Packed with significantly higher levels of this powerful antioxidant, which is associated with immune support and metabolic health.
Vitamin Boost: High levels of Vitamin E, Vitamin D, and essential minerals
4. Real Food, Real Sizes
Jerseys are a smaller, traditional heritage breed. Because they grow naturally and aren't pumped up on grain rations, the cuts are more modestly sized than the massive, oversized portions you see in commercial grocery stores. A Jersey steak or roast provides a manageable, realistic portion size that leaves you feeling satisfied and nourished, rather than weighed down.
Presently, the Farm Stand freezer has a limited supply of lean burger waiting for you to try… Ground beef is so versatile…
