Green Beans and New Potatoes
My oldest brother is visiting us in Vermont this week, and as usual when siblings get together we start sharing childhood memories with the next generations. One of the memories we chatted about yesterday was our Mom’s favorite summer soup! We always had what I would have considered a big garden, which in reality, compared to the size of gardens we tend, was small, but it did it ever provide nutritious food for our family. None of it went to waste!
My Mom’s summer soup: Perhaps many of you enjoyed it yourself back in the day, and hopefully many of you still do, and if not… well, this summer is the time to do so! Stop by the Farmstand and pick up some freshly harvested green beans and some new baby potatoes! Honestly, that, along with some quality butter and whole milk, are all you really need!
Kathy’s Mom’s Green Bean and Potato Soup
Green Beans — as many as you like… snapped into bite-sized pieces
New Potatoes — cut into halves or smaller ones left whole
Whole Milk
Butter
Salt and pepper
There really is no secret! Just cook your beans and Potatoes. Drain out all water. Add together into a pot, cover with milk, and as much melted butter as you like. (I suggest a lot as it makes it so yummy and rich) Add salt and pepper to taste. Heat through and enjoy.
Now what makes this extra special is a slice or two of fresh homemade bread that you can break up into bite-sized pieces and toss right into your soup. The bread soaks up the buttery milk, adding a special touch to this recipe.
Oh! I hope you can enjoy this soon! Sometimes it’s just special to eat simply… no complications and giving time to spend the best of summer outside vs. long hours in the kitchen making a complicated dinner.
